Lemon Cupcakes with Elderflower Buttercream Recipe

4 Jul 2016 4 comments

I apologise for being late with this post. I have been ill the past couple of weeks but I am feeling so much better now so here is a lovely cupcake recipe for you. I am continuing the elderflower theme. The actual cupcake  is almost identical to the coffee ones in my previous post.  These cupcakes are just perfect for summertime…well anytime as the weather isn’t exactly summery in England at the moment but cake is cake so I hope you enjoy. Please remember to subscribe if you enjoy my blog posts.

Ingredients

225g Self raising flour

225g Castor sugar

225g butter or marg

3 eggs

Rind from 2 lemons

Icing

500g icing sugar

250g unsalted butter soft

3 tbsp elderflower cordial

Method

makes 12 cupcakes

  1. Cream butter or marg together with the sugar until pale and smooth
  2. add eggs one by 1 and beat until smooth.
  3. add flour and the rind
  4. mix until all incorporated
  5. place in cupcake liners in a muffin tin and fill each case 3/4 full of mixture
  6. place in a preheated oven at 180 ° c for 15 -18 minutes or until golden brown and a toothpick inserted in the middle comes out clean.
  7. leave to cool

For the icing

  1. in an electric mixer or handheld whisk beat the butter until pale and soft.
  2. add icing sugar 1/3 at a time until well incorporated.
  3. Add the elderflower cordial and continue to beat until smooth.
  4. Fill piping bag with buttercream and use a star tip nozzle,
  5. Pipe in  a swirl from the outside in to create the desired look
  6. Eat!

Hi, my name is Jessie.

I live in Bedfordshire with my husband and my two boys. I am a born-again Christian and my faith is very important to me. All that I do in life and with my family is to the glory of God, without whom I am nothing. I love to cook, craft, bake and much more. I have created this blog to share my experiences of motherhood and anything I have found useful on the way. I have named this blog the Artisan mom because I believe as mothers we exercise great craftsmanship which makes us artisans of motherhood.

The Bible, Colossians 3v23, “Whatever you do, work at it with all your heart, as working for the Lord and not for men.”
