Possets are a lovely light summery dessert. The cool creamy texture and the refreshing zing of lime and subtle floral elderflower taste is perfect on a hot summers day. They are so simple to make as they don’t have lots of ingredients. They are perfect to enjoy after a big meal. This recipe serves 6 people or 4 generously(I made it for 4)

Ingredients

600ml double cream

175g sugar

Juice of 4 limes and zest of 2

100ml of elderflower cordial

Method

  1. Place Cream and sugar in a heavy bottomed pan and slowly bring to a simmer, stirring to dissolve the sugar.
  2. let  the cream and sugar simmer for 3 minutes
  3. Take off the heat and add the cordial, juice and rind. whisk
  4. Pour through a sieve to remove any lumps and rind.
  5. Pour into serving glasses, place in the fridge until set(Usually around 4 hours)
  6. Serve with a few pieces of grated rind on top

I hope you enjoy
